Ingredients Serves: Two
2 large eggs
1/2 teaspoon olive/canola oil
2 whole wheat English muffins, cut in half & toasted
4 flat-leaf spinach leaves
- Heat a skillet over medium heat and add the oil.
- After about 1 minute, gently pour the eggs into the hot skillet.
- When the eggs start to set and the edges are solid, flip the eggs.
- Put the bottom halves of the English muffin on a plate. Cover the other half of the English muffin. Serve right away.
