Celebrating Spinach!

In honor of National Spinach Day, we’re sharing some of our favorite spinach recipes! It’s such a fun vegetable to cook with. You can put it in almost anything, from pasta sauce, to soup, to delicious smoothies! It’s also great raw in salads instead of lettuce.

Avocado, Spinach, and Chickpea “Smashwich”

This fun kid-friendly twist on avocado toast is a fun snack to make with the kids! Drain a can of chickpeas and toss into a bowl with roughly chopped avocado. Let the kids ‘smash’ it together! Add some spices like lemon juice, garlic, or cilantro. Spread the avocado-chickpea mixture on a piece of toast and top with plenty of spinach!

Brazilian Rice

On colder nights, make this flavorful and filling Brazilian rice recipe! Equal parts spiced rice and spinach, this is a great way to eat more vegetables. Feel free to add other veggies of your choice, like bell peppers, carrots, and tomatoes. This dish can be prepared a day in advance and easily reheated.

Every Shade of Green Salad

We love how easy it is to make this salad! Toss in every green veggie to create a delicious, gradient salad. This recipe includes spinach, romaine lettuce, green beans, celery, avocado, and green grapes. However, feel free to substitute with other green fruits and veggies. Add in parsley and cucumbers for a more Mediterranean feel, or kale and cabbage for an Asian-inspired salad.

Spinach and Corn Casserole

Frozen spinach is a great option if fresh spinach isn’t available. This casserole uses a package of frozen spinach along with onions and creamed corn. Mix together and top with Parmesan cheese and bread crumbs before baking.  It’s an easy side dish perfect for colder evenings!

Peachy Green Smoothie

We love smoothies! They’re easy and quick to make with whatever ingredients you have on hand.  This smoothie recipe blends together peaches, spinach, and almond butter for a refreshingly tasty drink. Tip: Get the kids to make this recipe! It’s an easy way for them to get involved in the kitchen.
