This fun kid-friendly twist on avocado toast is a fun snack to make with the kids! Drain a can of chickpeas and toss into a bowl with roughly chopped avocado. Let the kids ‘smash’ it together! Add some spices like lemon juice, garlic, or cilantro. Spread the avocado-chickpea mixture on a piece of toast and top with plenty of spinach!
On colder nights, make this flavorful and filling Brazilian rice recipe! Equal parts spiced rice and spinach, this is a great way to eat more vegetables.
